Sharman’s Lemon Truffle Delights

Ingredients:
8/10 medjool dates
2ozs of raisins
2ozs of ground almonds
1oz of unsweetened desiccated coconut
1oz of cashew nuts
Grind of 1/2 of unwaxed lemon
Juice of the 1/2 unwaxed lemon
1 full tbsp of melted coconut oil.

Method:
Put half of the desiccated coconut, plus the rest of the ingredients, into a food processor and mix into a paste. With clean hands, separate the mixture and roll into round balls. Dust with remaining coconut, and leave to set in fridge for half an hour. Enjoy – but beware, they are very more-ish! ; )
